Chickpea and Spinach Curry


Ingredients:

1 tablespoon olive oil

1 onion, diced.

2 cloves garlic, minced.

1 tablespoon curry powder

1 teaspoon ground cumin

1/2 teaspoon ground turmeric

1 can chickpeas rinsed and drained.

1 can diced tomatoes.

2 cups fresh spinach leaves

Salt and pepper to taste

Instructions:

In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic and cook until softened.

Stir in curry powder, ground cumin, and ground turmeric, and cook for another minute until fragrant.

Add chickpeas and diced tomatoes to the skillet, stirring to combine. Bring to a simmer and cook for 10-15 minutes.

Stir in fresh spinach leaves and cook until wilted. Season with salt and pepper to taste.

Serve hot with cooked rice or naan bread.
